Unusually for sherry casks used in the whisky industry, which are normally “seasoned” for a much shorter period, this hogshead from Tonelería Juan Pino in Montilla held Oloroso sherry for over 20 years. This is a whisky borne of patience, with a full 10 years in the first fill sherry wood lending enough sweetness to balance the unmistakable savoury notes emanating from the spirit we know and love, perhaps more than any other at A. D. Rattray.
